Avocado, Tomato & Cucumber Salad

A fresh, colourful salad of cherry tomatoes, cucumber, sliced onion and avocado, tossed in a simple dressing of olive oil, fresh parsley, mixed herbs, salt and a dash of togarashi. I served mine with fluffy basmati rice and air fryer chicken legs.

Ingredients

  • Salad: 1/2 cup cherry tomatoes, halved
  • Salad: 1 medium cucumber, chopped
  • Salad: 1 medium onion, sliced
  • Salad: 1 medium avocado, chopped
  • Dressing: 2 teaspoons mixed herbs spice
  • Dressing: Pinch of salt
  • Dressing: Dash of togarashi
  • Dressing: 1/2 bunch fresh parsley
  • Dressing: 3 tablespoons olive oil

Method

  1. 01

    Prepare the tomatoes: halve the cherry tomatoes.

    Chop the cucumber.

  3. 03

    Slice the onion.

  4. 04

    Chop the avocado.

    Make the dressing: combine the mixed herbs spice, salt, togarashi, fresh parsley and olive oil.

    Combine the prepared tomatoes, cucumber, onion and avocado in a bowl.

    Add the dressing and toss everything together.

    Let the salad stand for about 15 minutes before serving.

Serving Suggestion

I served this salad with fluffy basmati rice and my Air Fryer Chicken Legs, with a small ramekin of green chilli sauce on the side.
