Air Fryer Chicken and Broccoli Bowl
Some dinners are all about keeping things simple, and this air fryer chicken and broccoli bowl is exactly that. I tossed cubed chicken breast, fresh broccoli and red bell pepper with a drizzle of avocado oil and my choice of seasonings, then cooked everything together in the COSORI Dual Blaze. The result was a colourful, yummy bowl finished with sesame seeds and chopped green onions. We enjoyed ours just as it was, but you could also serve it with rice or another starch if you want something more substantial.

Ingredients
- 2 chicken breasts, cut into bite sized cubes
- 1 small head of fresh broccoli, cut into florets
- Red bell pepper, sliced
- A drizzle of avocado oil
- Onion powder, to taste
- Garlic powder, to taste
- Paprika, to taste
- Chicken spice, to taste
- Ginger powder, to taste
- Shichimi togarashi, to taste
- Black pepper, to taste
- Sesame seeds, to garnish
- Chopped green onions, to garnish
Method
- 01
Cut the chicken breasts into bite sized cubes. Cut the fresh broccoli into florets and slice the red bell pepper.
- 02
Place the chicken, broccoli and red pepper together and add a drizzle of avocado oil.
- 03
Season with onion powder, garlic powder, paprika, chicken spice, ginger powder, shichimi togarashi and black pepper, all to taste. Toss everything together until evenly coated.

- 04
Transfer the seasoned chicken and vegetables to the COSORI Dual Blaze air fryer basket. Everything cooks together from the start.
- 05
Air fry at 190°C for approximately 12–15 minutes, shaking the basket halfway through cooking.

- 06
Before serving, check that the thickest pieces of chicken have reached an internal temperature of at least 74°C (165°F) using a food thermometer. If not, continue cooking until they do. My 12–15 minutes is a guide, not a guarantee for every cube size or air fryer.
- 07
Transfer the chicken and vegetables to a serving bowl, finish with sesame seeds and chopped green onions, and serve immediately.

Lackie's Notes
Cut the chicken into reasonably similar sized cubes to encourage even cooking, and keep the broccoli florets at a manageable size.
Shake the basket halfway through, as I did.
Air fryer performance and chicken cube size can affect cooking time, so always check the chicken reaches at least 74°C internally.
Adjust the seasonings to your own taste.

Serving Suggestion
We enjoyed this chicken and broccoli bowl on its own. For a more substantial meal, you could serve it with rice or another starch of your choice.
