Ingredients
- 1 portion of square country bread, with the centre hollowed out to create space for the filling
- 4 slices pastrami
- 1 handful baby spinach
- 1/4 red bell pepper, sliced
- 1/4 green bell pepper, sliced
- 1/2 white onion, sliced
- Approximately 200 g grated mozzarella cheese
- Garlic, to taste (for the garlic parsley paste)
- Fresh parsley, to taste (for the garlic parsley paste)
- Salt, to taste (for the garlic parsley paste)
- Butter, to taste (for the garlic parsley paste)
- Olive oil, to taste (for the garlic parsley paste)
Method
- 01
Cut and hollow out the centre of the square country bread, leaving enough bread around the edges and underneath to hold the filling.
- 02
Add garlic, fresh parsley, salt, butter and olive oil to a food processor. Blend into a spreadable paste.
- 03
Spread the garlic parsley paste over the inside of the hollowed bread.

- 04
Arrange a handful of baby spinach inside the bread, followed by the four slices of pastrami.

- 05
Layer grated mozzarella with the sliced red and green bell peppers and sliced white onion. Finish with more of the mozzarella on top, using approximately 200 g in total.

- 06
Place the assembled bread in the COSORI Dual Blaze and air fry at 180°C for 10 minutes, until the mozzarella is melted and golden.

- 07
Remove carefully and serve hot. Cut into portions to reveal the layers of pastrami, vegetables and melted cheese.

Lackie's Notes
The garlic parsley paste is spread inside the hollowed bread, not over the cheese.
The mozzarella melts over the filling and becomes golden on top.
Serve immediately while the cheese is warm and melted.
