Traditional Beef Liver Stew with Peppers

A simple, homestyle beef liver stew with onions, garlic, colourful capsicum and tomato paste, finished with plenty of fresh coriander. No complicated spice mix here. Just a few ingredients and a rich sauce, with the liver kept tender.

Ingredients

  • 1 kg beef liver
  • Approx. 250 ml milk, for soaking
  • 1 onion, sliced
  • 4 garlic cloves, crushed
  • 1 tbsp tomato paste
  • 1 red capsicum, sliced
  • 1 green capsicum, sliced
  • Cooking oil, as needed
  • Small splash of water
  • Salt, to taste
  • 1 bunch fresh coriander, chopped

Method

  1. 01

    Prepare the liver: remove the thin outer membrane from the beef liver and cut the liver into bite sized chunks.

    Soak in milk: place the liver in a bowl with approximately 250 ml milk and soak for about 15 minutes.

    Drain well: drain the liver well before cooking.

  4. 04

    Cook the liver: heat some oil in a large pan and add the liver. Cook until the liquid released by the liver has cooked away.

    Add the onion: add the sliced onion and continue cooking until the onion begins to soften.

    Add the garlic: add the crushed garlic and cook briefly with the liver and onions.

    Add the tomato paste: stir in the tomato paste and season with salt to taste.

  3. 08

    Make the sauce: add a small splash of water and stir everything together, allowing it to form a rich sauce around the liver.

    Add the peppers: add the sliced red and green capsicum. Continue cooking until the peppers have softened to your liking and the liver is cooked through, taking care not to overcook the liver.

    Finish with coriander: stir through the chopped fresh coriander and remove from the heat.

Lackie's Notes

Liver can turn tough when it is overcooked, so once it is cooked through, don't extend the cooking time unnecessarily.

Soaking the liver in milk first and draining it well makes a real difference to how mellow and tender it tastes.
