Easy Kenyan Kachumbari (Fresh Tomato & Onion Salsa)

Fresh, colourful and full of flavour, this easy Kenyan kachumbari is made with tomatoes, red onion, coriander and green chillies, finished with lemon, seasoned salt and a dash of vinegar. I love serving it as a fresh side with everything from beef tacos to rice, stews and BBQ dishes.

Ingredients

  • 2 tomatoes
  • 1 medium red onion
  • 1 bunch fresh coriander
  • 2 green chillies
  • Juice of 1/2 lemon
  • Seasoned salt, to taste
  • Dash of vinegar

Method

  1. 01

    Prepare the tomatoes: prepare the 2 tomatoes and add them to a mixing bowl.

  2. 02

    Add the red onion: prepare the medium red onion and add it to the tomatoes.

  3. 03

    Add the coriander: chop the fresh coriander and add it to the bowl.

  4. 04

    Add the chillies: prepare the 2 green chillies and add them.

  5. 05

    Add the lemon: squeeze in the juice of half a lemon.

  6. 06

    Season: add seasoned salt to taste.

  7. 07

    Add the vinegar: add a dash of vinegar.

  8. 08

    Mix: mix everything together until evenly combined.

  9. 09

    Let it rest: leave the kachumbari to sit for about 15 minutes before serving.

Lackie's Notes

This is one of those recipes where the quantities really depend on how many people I'm feeding and, of course, what the ancestors are telling me that day. 😂 I served this with beef tacos, then again with rice and my beef liver stew, but it's also perfect alongside a BBQ. If you don't like too much heat, simply leave out the chillies. I keep any leftovers chilled in the fridge and use them throughout the week. ❤️
