Fresh Mozzarella Salad in Minutes

Sometimes the simplest things are exactly what you need. This fresh mozzarella salad comes together in minutes with peppery rocca, juicy cherry tomatoes and fresh mozzarella, finished simply with olive oil, herbs, salt and black pepper. I served mine alongside my One Pan Air Fryer Bacon & Eggs on Toast, but it's an easy fresh side for breakfast, brunch, chicken, fish or whatever else is coming out of the kitchen.

Fresh mozzarella salad with rocca and cherry tomatoes

Ingredients

  • Fresh rocca leaves
  • Fresh mozzarella
  • Cherry tomatoes
  • Olive oil
  • Salt
  • Black pepper
  • Herbs

Method

  1. 01

    Add the fresh rocca leaves to a serving bowl or plate.

  2. 02

    Add the cherry tomatoes.

  3. 03

    Add the fresh mozzarella.

  4. 04

    Drizzle lightly with olive oil.

  5. 05

    Season with salt, freshly ground black pepper and herbs.

  6. 06

    Gently toss everything together, taking care not to break up the mozzarella too much.

    Serve immediately.

Lackie's Notes

This really is one of those salads that doesn't need much.

Fresh mozzarella brings a lovely creaminess, while the rocca adds a peppery bite and the cherry tomatoes keep everything fresh.

I keep the dressing ridiculously simple with olive oil, herbs, salt and pepper and let the ingredients do the rest.

Make it just before serving so the rocca stays fresh and the tomatoes look their best.

I served this fresh mozzarella salad with my One Pan Air Fryer Bacon & Eggs on Toast for an easy breakfast or brunch. I also love serving this salad alongside my Air Fryer Chicken Legs for an easy, fresh lunch. This salad also works as a quick fresh side for air fryer chicken, fish or other everyday meals.
