Easy Greek Style Salad with Feta
Another day, another salad — we love salad over here! This is a simple, colourful Greek style salad made with cucumber, cherry tomatoes, red onion, red and yellow bell peppers, feta and fresh basil, dressed with olive oil, a dash of lemon juice, salt and black pepper. Nothing here needs measuring precisely; it is an easy, flexible salad you can adjust as you go. It works beautifully as a fresh side for air fryer meals, grilled meats, brunch dishes or as part of a bigger spread. I served mine alongside my Smoked Salmon, Egg & Cheese Air Fryer Breakfast Bake.

Ingredients
- 2 cucumbers
- 1 handful cherry tomatoes, or according to preference
- 1 medium red onion
- 1/2 large red bell pepper
- 1/2 large yellow bell pepper
- 1 handful feta cheese
- Fresh basil, chopped
- Splash of olive oil
- Dash of fresh lemon juice
- Salt, to taste
- Freshly ground black pepper, to taste
Method

Prepare the vegetables: chop the cucumbers into bite sized pieces, halve the cherry tomatoes, cut the red onion into salad sized pieces and chop the red and yellow bell peppers into bite sized pieces.

Combine: add the cucumber, cherry tomatoes, red onion and colourful bell peppers to a large bowl.

Add the basil: scatter over the freshly chopped basil.

Season: season with salt and freshly ground black pepper according to taste.

Dress: add a splash of olive oil and a dash of fresh lemon juice, then toss gently until the vegetables are lightly coated.

Add the feta: add a generous handful of feta, keeping some pieces substantial rather than crumbling them completely, and gently combine without crushing the feta or vegetables.

Serve: serve fresh as a side salad with your favourite meal.
The quantities here are relaxed on purpose. Adjust the tomatoes, feta and onion to suit how much salad you want and how you like it.

Lackie's Notes
Cut the vegetables into generous bite sized pieces so the salad keeps plenty of texture.
Add the feta gently so the pieces stay relatively chunky.
Start with a small dash of lemon juice and add more according to taste.
This salad does not need a complicated dressing — olive oil, lemon, salt and black pepper are enough.
The quantities are flexible, so adjust the vegetables and feta according to how much salad you want to make.

Make It Your Own
- Add more or fewer cherry tomatoes.
- Adjust the feta according to taste.
- Use whichever colourful bell peppers you have available.
- Adjust the amount of red onion according to preference.
- Add a little more lemon if you prefer a brighter dressing.
