Air Fryer Umami Butter Beef & Mushrooms

Tender steak cubes seasoned with meat spice, soy sauce, teriyaki sauce and togarashi, air fried until browned, then tossed with sliced mushrooms and homemade parsley garlic butter. A rich, savoury dish that I served with Kenyan mokimo and sautéed tenderstem broccoli.

Ingredients

  • Approximately 700 g tender steak, cut into cubes
  • 9 medium white mushrooms, sliced
  • Meat spice, to taste
  • Salt, to taste
  • Teriyaki sauce, to taste
  • Soy sauce, to taste
  • Togarashi, to taste
  • Butter, for the homemade parsley garlic butter
  • Fresh garlic, for the parsley garlic butter
  • Fresh parsley, for the parsley garlic butter

Method

    Cut the steak into cubes and season with meat spice, salt, teriyaki sauce, soy sauce and togarashi.

    Mix to coat and leave the seasoned beef to marinate for 10 minutes. The prep time includes this.

    Slice the white mushrooms.

    When I made this, I put the sliced mushrooms beneath the COSORI Turbo Blaze crisper plate and arranged the seasoned beef on top of the plate. This was my own experiment, not a COSORI-approved method. See the note below before trying it.

    Air fry at 180°C for 20 minutes in total. I didn't preheat the air fryer.

    At the 10-minute mark, rearrange the beef pieces, then continue cooking.

    At 18 minutes, I lifted out the crisper plate and tipped the cooked beef into the mushrooms in the bottom of the basket, then mixed the beef and mushrooms together.

    To make the homemade parsley garlic butter, mix butter with minced fresh garlic and chopped fresh parsley. I measured all three by eye and to taste.

    Add the homemade parsley garlic butter and mix.

    Return the mixture to the air fryer for the final 2 minutes, completing the 20 minutes of air frying.

    Serve hot.

My setup, with the mushrooms under the crisper plate, may differ from how the manufacturer intends the air fryer to be used. Please follow the instructions for your own air fryer model and keep food in the manufacturer-approved cooking areas. Make sure the beef is cooked to a safe internal temperature for the cut, following applicable food safety guidance. Cooking times may vary with cube size and air fryer model.

Lackie's Notes

The garlic goes in through the homemade parsley garlic butter, not as a separate ingredient in the beef marinade.

I measured the seasoning by eye and adjusted it to taste.

Soy sauce and teriyaki sauce both add saltiness, so season thoughtfully.

I rearranged the beef at 10 minutes and added the parsley garlic butter for the final 2 minutes.

I made this in my COSORI Turbo Blaze and haven't tried it in another air fryer.
