Easy Air Fryer Beef Skewers

I kept these beef skewers simple because I wanted the flavour of the beef to come through rather than covering it with lots of seasoning. I used ribeye, choma spice (BBQ spice) and just a little olive oil. After marinating the beef for 30 minutes, I threaded it onto metal skewers and cooked it in the air fryer. I served the skewers with ugali and my homemade kachumbari.

Ingredients

  • 500 g ribeye beef, cubed
  • Choma spice (BBQ spice), to taste
  • Olive oil, a drizzle
  • Fresh coriander, chopped, for finishing

Method

    Season the beef: place the cubed ribeye in a bowl. Season with choma spice (BBQ spice) to taste, add a drizzle of olive oil and mix so the beef is coated.

    Marinate: leave the seasoned beef to marinate for 30 minutes.

    Assemble the skewers: thread the beef cubes onto four metal skewers. The 500 g of beef fitted exactly onto four skewers, with no onions, peppers or other vegetables between the beef pieces.

    Air fry: arrange the four skewers in the air fryer basket and cook at 180°C for 8 minutes.

    Brown: increase the temperature to 205°C and cook for another 2 minutes to brown and crisp the outside.

    Finish and serve: remove the skewers from the air fryer, sprinkle with freshly chopped coriander and serve with ugali and kachumbari.

Lackie's Notes

The point of this version was simplicity. I already have another beef skewer recipe with peppers, onions and much more seasoning, but for these skewers I wanted the ribeye itself to be the focus.

I added the choma spice to taste rather than measuring it.

I used the final 2 minutes at 205°C specifically to give the outside more browning and a little crispness.

The beef looked ready when it came out and was tender when eaten.
