Air Fryer Eggs in a Hole
A simple breakfast of thick brioche slices, hollowed out, buttered and filled with eggs, then seasoned and air fried. I added turkey breast for extra flavour, but the cold cuts are optional, so use a cold cut of your choice or leave it out. Thick brioche made hollowing out the centre much easier.

Ingredients
- 2 thick slices brioche bread
- 3 eggs, divided between the two slices
- Butter, enough to cover the hollowed area of the bread
- 4 slices turkey breast, 2 slices per piece of bread (optional)
- Pinch of seasoned salt
- Pinch of black pepper
- Fresh fruit of choice, for serving
Method
- 01
Hollow the bread: carefully hollow out the centre of each of the 2 thick brioche slices, leaving enough bread around the edges and base to hold the filling. Thick slices make this much easier.

- 02
Add the butter: spread enough butter over the hollowed area of each piece of bread to cover it.

- 03
Add the turkey breast (optional): if using, place 2 slices of turkey breast inside each hollowed piece of brioche. You can use a cold cut of your choice or skip this step.

- 04
Add the eggs: crack the 3 eggs into the hollowed brioche, dividing them between the two pieces. One of mine held one egg and the other held two.
- 05
Season: season the eggs with a pinch of seasoned salt and a pinch of black pepper.
- 06
Air fry: place the prepared brioche in the air fryer and cook at 180°C / 350°F for 10 minutes. This gave me firm yolks; for softer yolks, cook for less time and check the eggs as they cook.

- 07
Serve: serve the eggs in a hole hot, with fresh fruit of your choice. I served mine with strawberries.

Lackie's Notes
I used thick brioche because it was easier to hollow out while still leaving enough bread around the eggs.
The turkey breast is optional. It adds another layer to the breakfast, but the eggs in a hole work without it.
I cooked mine for 10 minutes because I wanted firm yolks. If you prefer them softer, start checking the eggs earlier rather than relying on a fixed time.
I cooked these in my COSORI Dual Blaze without preheating and didn't flip the bread. Air fryers can cook differently, so these timings reflect the one I used. If you're wondering about preheating, have a look at Do You Need to Preheat an Air Fryer?

Serving Suggestion
Serve these hot with fresh fruit. I had mine with strawberries, but any fresh fruit you like works. For more air fryer breakfasts, try my Air Fryer Tomato & Onion Omelette or Air Fryer Rolled French Toast.
