Smoked Salmon, Egg & Cheese Air Fryer Breakfast Bake

This smoked salmon, egg and cheese breakfast bake is one of those meals that takes hardly any effort but looks like you made plenty. Eggs are mixed with smoked salmon, mozzarella, spinach, red onion and colourful bell pepper, topped with cherry tomatoes, then air fried until golden and set. I finished mine with fresh parsley and served it with a Greek style salad and a creamy herb dip. It is lovely for breakfast, brunch or a light lunch, and it is very much a recipe you can make your own — adjust the vegetables and quantities to your taste and whatever you have in the fridge.

Ingredients

  • 4 eggs
  • 100g smoked salmon
  • 200g mozzarella, grated
  • 1 handful frozen spinach
  • 1 medium red onion
  • 1 medium bell pepper (any colour — red or yellow gives the most colour)
  • 1 handful cherry tomatoes
  • Salt, to taste
  • Black pepper, to taste
  • Butter, for greasing the baking dish
  • Fresh parsley, to finish

Method

  1. 01

    Prepare the dish: lightly grease an oven and air fryer safe baking dish with butter.

  2. 02

    Prepare the vegetables: get the red onion and bell pepper ready for the egg mixture. The spinach I used was frozen, straight from the freezer.

    Mix the eggs: crack the 4 eggs into a bowl and mix with the frozen spinach, red onion, bell pepper and grated mozzarella, then season with salt and black pepper to taste.

    Add the smoked salmon: fold roughly 100g smoked salmon gently through the egg mixture, without breaking it down or overmixing.

    Transfer to the dish: pour the mixture into the buttered air fryer safe baking dish.

    Add the tomatoes: arrange a handful of cherry tomatoes over the top.

  7. 07

    Air fry: place the dish into the air fryer and cook at 180°C for 15 to 20 minutes, until the egg mixture is set and the top is golden.

    Finish: remove the dish from the air fryer and finish with freshly chopped parsley before serving.

Air fryers and baking dishes vary, so start checking from around the 15 minute mark. The centre should be properly set before you serve it.

Lackie's Notes

Grease the dish with butter before adding the egg mixture so the bake lifts out cleanly.

Red or yellow bell pepper adds lovely colour, but any colour works.

Start checking around 15 minutes, because air fryers and baking dishes vary.

Make sure the centre is set before removing it from the air fryer.

Add the fresh parsley after cooking for a fresh finish.

Don't be afraid to adapt the vegetables and cheese to suit your taste.

Optional variations

Make It Your Own

  • Use whichever colour of bell pepper you prefer — red or yellow simply looks brightest.
  • Fresh spinach works well if that is what you have, instead of frozen.
  • Adjust the amount of red onion up or down to suit your taste.
  • Use more or less cheese depending on how cheesy you like it.
  • Swap the mozzarella for another good melting cheese if you cannot get hold of it.
  • Add or leave out vegetables depending on what is in your fridge.
