Air Fryer Tomato & Onion Omelette
Sometimes breakfast really doesn't need to be complicated. This Air Fryer Tomato & Onion Omelette uses just a handful of simple ingredients and takes only 6 minutes to cook. I add sliced onion and halved cherry tomatoes directly to an air fryer safe dish, pour the seasoned beaten eggs over them and leave everything alone. No mixing once the eggs go in. I just let everything take a shape of its own as it cooks. Finish with fresh parsley and breakfast is done.

Ingredients
- 4 eggs
- 1 medium onion, sliced
- A handful of cherry tomatoes, halved
- Olive oil, enough to lightly coat the air fryer safe tray or dish
- Salt, to taste
- Black pepper, to taste
- Fresh parsley, chopped, for finishing
Method

Beat and season the eggs: crack the 4 eggs into a bowl and beat them together. Season with salt and black pepper to taste.

Prepare the tray: lightly coat an air fryer safe tray or dish that fits comfortably inside your air fryer with olive oil.

Add the vegetables: place the sliced onion and halved cherry tomatoes into the prepared tray.

Add the eggs: pour the seasoned beaten eggs over the onion and cherry tomatoes. Do not mix everything together; let the ingredients settle naturally in the tray.

Air fry: place the tray into the air fryer and air fry at 180°C / 350°F for 6 minutes.

Finish: remove the omelette from the air fryer, finish with freshly chopped parsley and serve.

Lackie's Notes
Once the beaten eggs go over the tomatoes and onion, I don't mix them. I just leave everything alone and let it take a shape of its own in the air fryer.
