Easy Kidney Beans & Rice
Sometimes the simplest ingredients make the most satisfying meals. This easy kidney beans and rice recipe brings together tender kidney beans and fluffy rice with sautéed red onion, garlic and colourful bell peppers, finished with a little salted butter and fresh parsley. Simple, filling and very delicious. ❤️

Ingredients
- Cooked kidney beans
- Cooked rice
- Red onion, chopped
- Crushed garlic
- Green bell pepper, chopped
- Red bell pepper, chopped
- Olive oil
- Salt, to taste
- A little reserved kidney bean cooking liquid
- 1 tbsp salted butter
- Fresh parsley, chopped, to garnish
Method

Sauté the red onion: heat olive oil in a pan and sauté the chopped red onion.

Add the garlic: add the crushed garlic and cook for about 1 minute.

Add the bell peppers: add the chopped green and red bell peppers, season with salt and cook for a little while until they begin to soften.

Add the kidney beans: add the cooked kidney beans along with a little of their reserved cooking liquid.

Simmer: bring the mixture to a boil and cook for roughly 5 minutes.

Add the salted butter: add 1 tbsp salted butter and mix it through the beans and vegetables.

Add the cooked rice: add the separately cooked rice and mix everything thoroughly so the rice, kidney beans, vegetables and bean cooking liquid are well combined.

Finish over low heat: leave the combined rice and beans over very low heat for about another 5 minutes.

Garnish and serve: serve and garnish with freshly chopped parsley.
I started with a 400 g packet of dried kidney beans. I boiled them vigorously for about 10 minutes, discarded that first water and rinsed them, then moved them to my electric pressure cooker with fresh water and cooked them on high for about 25 minutes. I let the pressure release naturally and checked that they were completely tender. I divided the cooked batch roughly in half, used about half for this dish and froze the rest for another day. The rice was cooked separately in my rice cooker while the beans were cooking, using my usual rice cooker method.

I love my meat, but this is proof that we don't need meat to make food delicious. The beans, rice, peppers, garlic and that little bit of butter are more than enough. And as usual, the quantities depend on how many people I'm feeding and what the ancestors are saying that day. 😂❤️
