Air Fryer Spinach and Cheese Stuffed Beef Skewers

By Esther Lackie

Air fryer stuffed beef skewers get a delicious twist with tender skirt steak rolled around fresh baby spinach and mozzarella cheese. The beef is seasoned with BBQ spices, a little shichimi togarashi and avocado oil, then marinated for 20 minutes before layering on the mozzarella and baby spinach, rolling and skewering. Cooked until browned, with melted cheese tucked inside, these stuffed beef skewers take 50 minutes in total, including preparation and marination, and make a satisfying meal served with your favourite sides and dipping sauces.

Ingredients

  • Approximately 350g skirt steak
  • Approximately 100g fresh baby spinach, cleaned and patted dry
  • 10 slices mozzarella cheese
  • 2 teaspoons BBQ seasoning
  • 1/2 teaspoon shichimi togarashi
  • A drizzle of avocado oil

Method

  1. 01

Place approximately 350g of skirt steak in a bowl. Add 2 teaspoons BBQ seasoning, 1/2 teaspoon shichimi togarashi and a drizzle of avocado oil. Mix to coat the beef evenly and leave to marinate for 20 minutes before adding the cheese and spinach.

  2. 02

After marinating, arrange the seasoned skirt steak pieces on a clean work surface.

Layer the mozzarella cheese slices onto the marinated skirt steak, using 10 slices in total.

  2. 04

Layer approximately 100g of fresh baby spinach, cleaned and patted dry, over the mozzarella. The filling order is marinated skirt steak, mozzarella, then baby spinach.

Roll the beef around the spinach and mozzarella filling. Thread the stuffed beef rolls onto metal skewers to hold them together during cooking.

Remove the skewers carefully and serve with garlic sauce and green chilli sauce. Enjoy alongside a salad, fries, ugali or rice, depending on preference.

The 10-minute cooking time reflects my experience with this quantity in the COSORI Dual Blaze. Beef thickness, roll size, filling quantity and air fryer model can affect cooking. Check that the beef reaches safe doneness and adjust the cooking time as needed; 10 minutes will not give the same result for every thickness or appliance.

    Lackie's Notes

Patting the spinach dry helps avoid adding unnecessary moisture to the filling.

Secure the rolled beef with metal skewers before cooking, and leave enough room around the skewers for air circulation where possible.

The mozzarella melts inside the beef rolls. Serve immediately while the cheese is warm.

I cooked these without preheating or turning. Different steak thicknesses may need cooking-time adjustments; How to Cook Beef in an Air Fryer has more guidance.

    Serving Suggestion

Serve the skewers straight away with garlic sauce and green chilli sauce, alongside a fresh salad, fries, ugali or rice. Choose the sides to suit your appetite.
