Air Fryer Blueberry Lemon Muffins

I made a batch of blueberry lemon muffins in the air fryer using a packet of Betty Crocker Lemon Cake Mix and fresh blueberries. From the same batter I got two sizes: four larger muffins in ramekins and four regular ones in disposable aluminium muffin cups. They came together quickly, and they were a big hit with my friend's children.

Ingredients

  • 1 x 500g Betty Crocker Lemon Cake Mix
  • 1 cup water
  • 1/3 cup cooking oil
  • 3 eggs
  • 1 handful fresh blueberries, for mixing into the batter
  • Additional fresh blueberries, a couple for each muffin
  • Butter, for greasing the ramekins and disposable aluminium muffin cups

Method

  1. 01

    Lightly grease the inside of the ramekins and disposable aluminium muffin cups with butter. I used 4 larger ramekins and 4 regular disposable aluminium muffin cups.

    In a mixing bowl, prepare the Betty Crocker Lemon Cake Mix batter using the full 500g packet, 1 cup water, 1/3 cup cooking oil and 3 eggs. These are the quantities on the UAE packet for the full 500g.

    Add a handful of fresh blueberries to the batter and gently mix them through.

  4. 04

    Divide the batter between the prepared ramekins and disposable aluminium muffin cups. Do not overfill them. Around two thirds full is a useful guide because the muffins rise considerably during cooking.

    Add a couple of additional fresh blueberries to the top of each portion of batter.

    Place the muffins into the COSORI Dual Blaze. Do not preheat the air fryer.

    Air fry at 160°C for 15 minutes, or until the muffins are golden.

    Remove from the air fryer and allow them to settle before serving.

A little from me

Lackie's Notes

Don't overfill the ramekins or muffin cups. The muffins rise considerably while air frying, so around two thirds full is a useful guide.

I used both larger ramekins and regular disposable aluminium muffin cups in the same batch, and both worked well.

I didn't preheat the air fryer.

After portioning the batter, I added a couple of extra blueberries to the top of each muffin.

I made these in my COSORI Dual Blaze and haven't tried them in another air fryer.

Serving Suggestion

I served the larger muffins in their ramekins and the regular ones in their aluminium cups, with a little mint and a few blueberries on the plate just for presentation.
