Air Fryer Beef & Cheese Pastries
These Air Fryer Beef & Cheese Pastries were one of those recipes that completely exceeded expectations. 😮💨 A rich beef and vegetable filling with melted mozzarella is wrapped in flaky puff pastry and air fried until beautifully golden. Crispy on the outside, flavourful on the inside and honestly very difficult to stop eating. 😂❤️

Ingredients
- 6 puff pastry squares
- Prepared Air Fryer Beef & Vegetable Filling
- Grated mozzarella, as needed
- 1 beaten egg, for egg wash
- Sesame seeds
- Fresh parsley, for garnish
Method

Prepare the filling: have the prepared Air Fryer Beef & Vegetable Filling ready and suitable for handling before you fill the pastry.

Prepare the pastry: lay out 6 puff pastry squares.

Add the beef filling: place a couple of spoonfuls of the prepared beef filling onto each puff pastry square.

Add the mozzarella: add grated mozzarella as needed along with the beef filling.

Fold into triangles: fold each puff pastry square diagonally over the filling to create a triangular pastry pocket.

Seal the edges: use a fork to press and crimp the edges closed.

Add the egg wash: brush the pastries with beaten egg.

Add sesame seeds: sprinkle sesame seeds over the pastries before air frying.

Air fry in batches: air fry at 180°C / 350°F for 10 minutes per batch. I made 6 pastries and cooked them in two batches so they had room — 4 pastries first, then the remaining 2.

Garnish and serve: once cooked and beautifully golden, remove the pastries from the air fryer and finish with fresh parsley. I served mine with garlic sauce and lemon wedges on the side.

These completely exceeded my expectations. 😂 I originally made the beef and vegetable filling first, then decided it needed puff pastry and mozzarella around it because apparently that's how my mind works. 😂 A couple of spoonfuls of filling in each one is enough, but as usual, let the eyes do the measuring. I cooked them in two batches so they had enough room in the air fryer, then served them with garlic sauce on the side. Definitely one of my favourite air fryer creations. ❤️
