Kenyan-style Mukimo

This is my version of Kenyan mukimo, made with potatoes, spinach, green peas and sweet corn. I used sweet corn because I couldn't find green maize. Everything is boiled together, mashed and finished with a little butter.

Ingredients

  • 3 large potatoes, chopped into small pieces
  • 3 portions of frozen chopped spinach
  • ½ cup frozen sweet corn
  • ½ cup frozen green peas
  • 1 tablespoon butter
  • A dash of salt, to taste

Method

  1. 01

    Chop the potatoes into small pieces.

  2. 02

    Put the potatoes, frozen chopped spinach, sweet corn and green peas into a pot.

  3. 03

    Add water for boiling.

  4. 04

    Cook over medium heat for approximately 25 minutes, or until everything is tender.

  5. 05

    Drain any excess water as needed, then mash everything together.

  6. 06

    Add a dash of salt and 1 tablespoon of butter. Mix well and serve.

Lackie's Notes

Traditional Kenyan mukimo is often prepared with green maize. This version uses sweet corn because green maize was not available.

Frozen chopped spinach portions may vary in size depending on the brand.

Mash to your preferred texture.

Season with salt to taste.
