Air Fryer
Easy Air Fryer Chicken and Potatoes
This is one of those easy one-basket air fryer meals I come back to. Chicken thighs are one of my favourite chicken cuts to cook in the air fryer, so I season them, leave them to marinate for a bit, then add the potatoes straight into the same marinade. Everything goes into the air fryer together, and dinner more or less takes care of itself.

Ingredients
- Chicken thighs
- Potatoes
- Salt, to taste
- Paprika, to taste
- BBQ spice, to taste
- Garlic powder, to taste
- Onion powder, to taste
- 2 teaspoons cornstarch
- A splash of avocado oil
- Green onions, for serving
- Sesame seeds, for serving
Method
- 01
Season the chicken: place the chicken thighs in a bowl. Add salt, paprika, BBQ spice, garlic powder and onion powder to taste, then add 2 teaspoons of cornstarch and a splash of avocado oil. Mix thoroughly so the chicken is evenly coated.
- 02
Marinate for 15 minutes: leave the seasoned chicken to marinate for 15 minutes.
- 03
Prepare the potatoes: wash the potatoes and pat them dry with a kitchen towel. Add them to the marinated chicken and mix them through the marinade so they become coated.
- 04
Air fry: transfer the chicken thighs and potatoes to the air fryer and air fry at 180°C / 350°F for 20 minutes.

- 05
Check halfway through: about halfway through cooking, open the air fryer and check how the chicken and potatoes are getting on, then continue cooking for the rest of the 20 minutes.
- 06
Garnish and serve: serve the chicken and potatoes hot, finished with green onions and sesame seeds.

Lackie's Notes
Chicken thighs are one of my favourite chicken cuts to cook in the air fryer, and this is such an easy way to turn them into a full meal.
I didn't turn or toss anything during this cook. I simply opened the basket halfway through to see how everything was getting on. Air fryers vary, so keep an eye on yours.
