Ingredients
- 1 large tortilla
- 3 eggs, beaten
- 6 slices of salami
- Approximately 4 slices of mozzarella cheese
- Avocado oil, enough for cooking
- A pinch of salt
- Chopped green onions, for garnish
Method
- 01
Crack the three eggs into a bowl, add a pinch of salt and beat until combined.
- 02
Heat a little avocado oil in a frying pan over medium heat.
- 03
Arrange the six salami slices in the pan and let them begin cooking.

- 04
Pour the beaten eggs over and around the salami, spreading them into a roughly circular layer.
- 05
Place approximately four slices of mozzarella over the egg and salami mixture.

- 06
Lay the large tortilla over the mixture while the eggs are cooking, pressing gently so it makes contact with the eggs.

- 07
Once the eggs have set sufficiently to turn, carefully flip the entire tortilla and egg mixture so the tortilla is underneath and the egg and salami layer faces upwards.

- 08
Fold the tortilla in half using a spatula, enclosing the eggs, salami and cheese.

- 09
Continue cooking over medium heat until the tortilla is golden, the eggs are fully cooked and the cheese is warmed through.
- 10
Transfer to a plate, cut into portions and garnish with chopped green onions.

- 11
Serve hot.
The overall cooking time is approximately 10 minutes.

Lackie's Notes
Use a large tortilla that fits comfortably in the frying pan.
Medium heat helps the eggs cook while the tortilla develops a golden surface.
Let the eggs set sufficiently before turning so the mixture holds together.
Serve while warm for the best texture.

Serving Suggestion
Enjoy hot with a cup of coffee or, for a leisurely Sunday breakfast, a nicely chilled mimosa.
